Primo: Homemade Italian Goodness

Italian GoodnessPasta isn’t just about grabbing some old, boxed noodles and boiling them,” explains Primo’s Head Chef Max Clifford. “The best pasta is fresh, using superior ingredients and without preservatives or other additives used for shelf life or to cut costs.”

At Primo Italian Restaurant, the spaghetti, ravioli and mostaccioli is made fresh, in house each week. For Sous Chef Shaun Lawson, fresh pasta is a must.

“The difference between store bought pasta and fresh pasta?” Lawon begins. “It is like the difference between canned tomatoes and fresh tomatoes. The taste is hardly comparable. It isn’t sticky, the pasta is lighter, and the flavor is immense.”

It comes as no surprise that Primo combines their unique homemade pasta with a plethora of dishes throughout their menu. However, as good as the pasta, is, the locally owned restaurant features far more.

A highly recommended dish is the pan seared scallop risotto, featuring grilled squash and zucchini, spinach, and a white wine butter sauce topped with Growing Oshkosh sunflower sprouts. Other favorites include the Saturday prime rib and the Ribeye, available nightly.

Most impressive was the quantity and diversity of vegetarian dishes available that sound absolutely intriguing and warrant multiple return trips:

Egg Plant & Roasted Vegetable Parmesan, with lightly breaded egg plant, roasted vegetables, portabella mushrooms, topped with a parmesan and mozzarella marina.

Sundried Tomato Parmesan with mushrooms, scallions, fresh asparagus, spinach, garlic, basil, oven roasted tomato pesto, parmesan, and fettuccine.

Veggie Panini with portabella mushrooms, egg plant, zucchini, roasted red pepper sauce witih swiss cheese.

Pizzas are also on the menu, including a roasted veggie pizza that is layered with roasted zucchini, yellow squash, egg plant, red peppers, asparagus, sliced plum tomatos, sundried pesto oil and a blend of Italian cheeses.

Primo also will take care of your Sunday breakfast needs, featuring a full breakfast menu that includes homemade pancakes, waffles, and French toast, in addition to all of the egg dishes you can imagine.
