1 1/4 cup Whole Wheat Flour
1 large Egg
2 tablespoons Butter
2 teaspoons Baking Powder
1/2 teaspoon Cinnamon
1 cup Milk
3/4 of one 15oz. can of Pumpkin Pie Mix
In a large bowl, combine all ingredients and mix.
Spray skillet with non-stick vegetable oil, heat over medium heat
Spoon two tablespoons of batter onto skillet to form each pancake.
Cook 2 minutes, or until they begin to bubble, then flip and cook 2 more minutes.
Another favorite this time of year is Grandma’s Pumpkin Muffins!
2 Large Eggs
1/4 Olive Oil
1 cup canned Pumpkin Pie Mix
1/4 cup Milk
3/4 cup Sugar
1/2 teaspoon Salt
2 teaspoons Baking Soda
1 teaspoon Allspice
1 teaspoon Cinnamon
1 3/4 cups all-purpose Flour
1/2 cup Chocolate Chips (optional, but why not?!)
Preheat over to 350 F
Lightly spray muffin pan with vegetable oil, or use cupcake liners
Combine eggs, oil, pumpkin mix, milk and sugar in medium bowl and blend with mixer.
Add salt, baking soda, allspice, cinnamon, flour and chocolate chips and mix by hand until all dry ingredients are moistened.
Spoon into muffin pan, filling each cup 3/4 full.
Bake 20-25 minutes.
Cool on a wire rack.
